Strawberry Vanilla Melon Breads: Happy morning breads!

 It's soft and fragrance, and it's sweet ^^. How can you resist it!

 I love making bread, and I really want other people to enjoy it too, ^^ making bread at home is not as hard as you think. Today, while thinking about making some breads for my family, I got the idea, haha, I want to make strawberry melon bread (ok, I'm crazy, just thinking about making bread or any kinds of sweet and dessert makes me HAPPY!!!!). I think about soft and rich bread with a strawberry flavor cookie dough on top, The strawberry flavor come from the strawberry extract, sound good, right? But I think that it will be better if I use the strawberry powder (anyway, next time, haha). I want to add more fragrance, so I add the vanilla seeds into the bread dough ^^, well, the tiny little seeds look great too.
Serve this bread for breakfast with a cup of hot tea or coffee (or milk for children), it will be great morning, do you think so?

Strawberry Vanilla Melon Breads
Makes 10 


300g .............................. Bread flour
1tsp ................................ Instant yeast
8g ................................... Salt
50g ................................. Sugar
60g ................................. Unsalted butter
60g ................................. Milk
70g ................................. Eggs
60g ................................. Water
........................................ Seeds from 1/2 of vanilla beans

Strawberry cookie dough
130g .............................. Cake flour
2g .................................. Baking powder
40g ............................... Eggs
60g ............................... Sugar
....................................... A pinch of salt
60g ............................... Butter
1tsp .............................. Strawberry extract
1tsp .............................. Vanilla extract
...................................... Pink food coloring, optional

50g ............................ Butter cut into 10 cube, for filling
...................................... Granulated sugar, for rolling the dough


 Mix together egg, water, and milk.
Put the flour, the sugar and yeast in a bowl, whisk to combine, add and salt whisk again. Pour the egg and milk mixture into the bowl.
Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.

Take the dough out of the bowl and knead, you will see the dough will be elastic after about 2 minutes. 
Add the butter, vanilla seeds and knead by using the heel of your hands to compress and push the dough away from you, (with a lot of butter, it will be separated at first)  then fold it back over itself. Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough. Knead for 10-15 minutes or until the dough is soft, pliable, smooth and slightly shiny, almost satiny.

Put the dough into a light buttered bowl. Let the dough rise in a warm place until double in size (can be 1 hour or 1 hour and a half check often depend on the temperature).

Make the Strawberry cookie dough

Beat the butter with sugar and salt until lighten in color.
Add the egg, beat to combine, add the vanilla and strawberry extract and beat to combine.


Add the coloring (if using), sift the cake flour and baking powder into the bowl, mix until combine.
Divide the dough into 10 pieces.


Preheat the oven to 200°C.
Place the baking paper on the baking sheet.
Divide the dough into 10 pieces, put the butter in the center, then roll into a ball.

 Cover the bread dough with cookie dough, mark the top of the bread by using the back of the knife, and dip the top of the bread in to the sugar bowl.
Place the dough on the baking sheet. Let the dough rise until almost double in size. Bake for 10-15 minutes.
